Not only a beautiful golden colour but a wonderful, distinctive taste as well. Golden Oysters have a sweet and nutty flavour and retain their crispness when cooked. They go really well in pork and chicken dishes or just serve them fried in butter on sourdough toast!
More of a delicate flavour and texture, Grey Oysters make a superb accompaniment to fish and when slightly caramelised, add a richness to creamy sauces.
A combination of both Golden and Grey are a revelation!
As with our Shiitakes, we also preserve our Oysters by drying them. All you need to do is rehydrate the mushrooms by soaking them in hot water for 20 minutes and then use them in a recipe of your choice.
