Shiitake mushrooms have a rich, fleshy taste and are excellent in a wide range of dishes – whether with steaks or in casseroles, in risottos or soups or in stir fries or other Chinese/Asian recipes.   They are a great replacement for meat in vegetarian dishes and work wonders in sauces. Chefs love them and they appear on more menus now than ever before.

Dried Shiitake Mushrooms

We also preserve our mushrooms by drying them. All you need to do is rehydrate the mushrooms by soaking them in hot water for 20 minutes and then use them in a recipe of your choice. Don’t throw away the water, it makes a really tasty base for stock or a sauce – we love to use it when making a risotto.
